I would imagine that Hollows like shinigami, don't actually breathe, as we understand it. What I mean is it is more of a simulated type environment, like the Matrix.
The "Air" Shinigami and hollows breathe is really just something else made up of spirit particles like everything in the ethreal world of bleach.
